Quick & Easy Hummus

Hummus sandwiches are one of my favorite meals for hot, summer days. They’re quick, light, easy and packed with flavor. Avocado, cucumber, tomato and lettuce all taste amazing between a couple of pieces of hummus-slathered bread.

I’ll be honest with you, this isn’t some elaborate, gourmet hummus recipe. You won’t be standing in your kitchen shelling all those tiny chickpeas or cooking them for an extra 30 minutes. BUT, it is quick, simple and delicious! When I say quick, I mean 3 minutes or less. As a busy mom, I’m always looking for the quickest way to a healthy meal. Balancing being a mom, avoiding plastic and also eating healthy meals–well, it can get a little challenging at times!

Here’s what’s new with me.

I recently started teaching English here in Japan, which takes a significant chunk of time out of my schedule. It’s really exciting for me to make connections with the local community and learn a few new Japanese phrases while I’m at it! I originally planned on teaching English when I moved to Japan, but then I found out I was pregnant and took a step back from my plan to teach. Now I’m able to balance being a mom and teaching English. I love it!

I also am really excited to have bought a serger, so I’m going to try my hand at making some eco-friendly products! Think unpaper towels, cloth baby wipes and cloth napkins. Once I get some serious serging skills under my belt, I want to make clothes for my daughter too.

Needless to say, my plate is pretty darn full. I’m still determined to make as much as possible from scratch in my kitchen, so here’s my 3 minute, super easy, packed-schedule-friendly, homemade hummus recipe.

Quick & Easy Hummus

This 5 ingredient hummus recipe can be thrown together in just a few minutes! Even better, you probably already have the ingredients in your pantry.

Ingredients

  • 1 can chickpeas rinsed and drained / organic if possible
  • 1 clove garlic chopped roughly
  • 1 lemon juiced
  • 1 tbsp olive oil
  • 1/2 tsp salt

Instructions

  1. Add all your ingredients to the blender/food processor.

  2. Pulse until your hummus is smooth and creamy.

  3. Taste and adjust garlic and salt to your preference.

  4. Enjoy with pita chips, veggies, or as sandwich spread. If you want it to look a little fancier, garnish with some paprika, olive oil and chopped parsley!
